Žolca, which we have always called žuca, is slowly cooked pork (hocks, tails, snouts) with the addition of beef bones. Rich in collagen. We always add bay leaves from our garden, Sečovlje coarse salt, and peppercorns that we bring from Sri Lanka. The prepared žolca is served in jars, from which we slowly scoop with a spoon, and the enjoyment is complete. Žolca is pasteurized and lasts in the refrigerator for up to 10 days from the date of purchase. For orders, only personal pickup is available in Manžan or Ljubljana.
