The cheese is made from unpasteurized milk during the summer when cows graze freely in the Matjaž hills. It matures for at least three months in the mountains, gaining the true aromas and flavors. The cheesemaker adds dried olive leaf powder to the mass during cheesemaking. The leaves are a useful and powerful antioxidant. The leaves are collected after the olives are harvested in the Manžan olive groves.
