Unfiltered and unpasteurized. Ingredients: Spring water, barley malt (gluten), oat flakes (gluten), hops, yeast. The beer is named after our hometown Ajdovščina. If you use a little imagination and think about how you would explain to a foreigner where we come from? Yes, from Out-of-China, logically!
Moreover, the purpose of this beer was very simple. We wanted a straightforward and light brew that also convinces atypical beer drinkers and even attracts some staunch traditionalists among the beer lovers. After all these years, Out of China is becoming a modern craft classic that even the most demanding beer enthusiasts enjoy.
It is a red beer with a charming bouquet of hoppy notes from Slovenian hops. Among them, we find three varieties of aromatic hops that we have only recently started cultivating in Slovenia. The red color comes from a blend of different malts, which also bring flavors and aromas of bread and caramel. Oat flakes help the light brew to have a full, silky body and a more persistent foam, as otherwise, with a modest 4.5% alcohol, it would be too watery.
What does it mean if beers are top or bottom fermented? Top fermentation is most often associated with ale-type beers. It is a method of alcoholic fermentation that occurs in beer when active yeast rises to the surface of the wort and forms a crown (a kind of yeast foam) on it. It mainly involves the yeast Saccharomyces Cerevisiae, which we colloquially call ale yeast. Such yeasts prefer higher fermentation temperatures, around 15 to 25 degrees. In contrast, bottom fermentation yeasts are associated with lager-type beers. This fermentation occurs at the bottom of the vessel. It mainly involves the yeasts Saccharomyces Pastorianus, or colloquially, lager yeast. Such yeasts prefer lower fermentation temperatures, around 5 to 10 degrees.
