Sardines
Fresh Galician sardines | The queen of the summer barbecue, straight from the fish market
The sardine is the favorite fish for summer barbecues in Galicia. When it arrives fresh directly from the Galician fish markets, in its peak season between June and September, its flavor is unmatched: natural fat that makes it incredibly juicy on the grill, intense flesh, and a sea aroma that no other fish can equal. The Galician tradition of sardine feasts is a true institution.
We send them vacuum-packed directly from the fish market within 24 hours, with several preparation options.
How to cook Galician sardines
Grilling is their queen preparation: over charcoal embers with a bit of coarse salt, 3-4 minutes on each side. Serve them directly on Galician bread to absorb the juices. They also turn out very well pan-grilled. Boneless fillets, marinated in salt, olive oil, and garlic for 30 minutes and served cold, make a high-level tapa.
Storage
Keep between 0 and 4°C. Vacuum-packed. As fresh oily fish, consume within 24 hours for maximum quality. Suitable for freezing directly in the packaging.
