Every year — for more than ten years — we brew beer for friends and family who gather around a full holiday table. This is our annual winter warmer, which is not exactly a beer style per se, but rather a designation of a broader brewing tradition at the end of the year. Winter warmer can also be interpreted in a more sensory way — as a beer that drives away the cold of long winter nights with the warmth of flavors. The team gathers around Winter each year with a special enthusiasm. During the preparation of the final product, we are also warmed by the atmosphere created in the brewery. When Christmas classics resonate through the speakers, the entire team gets to work — we carefully hand-wrap each bottle, and every wrap carries a part of our story and dedication. This is not just about beer production; it is about a ritual and the magic of creation, where we can now call it a tradition and our need to do things our way. ABOUT PELICON WINTER BEER: Pelicon Winter is a dark beer brewed only once a year. A rich palette of specialty barley malts and winter spices matures for several months before the beer reaches your glasses. Each year the recipe is slightly different, so we also label each batch with the year. The bottle is hand-wrapped in festive paper, which further emphasizes the eagerly awaited seasonal brew. In this year's vintage, brewer Matej Pelicon, with masterful attention to detail and ingredients, combined orange peels with vanilla, cinnamon, and licorice. Once again, we await the discovery of layers of flavors and the joy that accompanies every good drink or dish! ABOUT THE HISTORY OF THE STYLE: Indulging a bit more during the holidays and having a more abundant table is considered the epitome of European culture. Brewers are no exception — for the “vahte” they indulged in a heftier portion of barley, higher alcohol, and perhaps a few expensive spices on top. In ancient times, spices also replaced hops, which were usually less in holiday beers, so that the beer could be heated if necessary — just as is done today with mulled wine. In England, there was even a tradition of soaking spiced and sweet Christmas bread in heated beer.
