The key is in the fruit. Artisan jams have a high percentage of fruit (between 50% and 60%), much higher than industrial jams.

The fruit content leads us to its vitamins. Each fruit has a different vitamin contribution and, therefore, different properties. While it is true that many vitamins disappear during the production process, others are concentrated in large amounts.
