Winemaker's Diary:
The hand harvest of grapes of exceptional quality took place in our Sari vineyard. Each variety was processed separately, the grapes were gently destemmed and then pressed. The must obtained in this way was statically clarified at a controlled temperature. After clarification, fermentation took place in stainless steel containers at a temperature of 15 – 18 °C. After fermentation, we set aside 300 liters of Semillon in a Seguin Moreau barrel, where it aged for 11 months. To create a balanced aroma and taste, we then blended 30% Semillon from wood, 30% Semillon from stainless steel, and 40% Sauvignon from stainless steel. After combining the individual wine portions, we bottled the resulting cuvée.
Wine Service:
At a temperature of 8 - 10 °C in glasses shaped like slightly closed tulips with a volume of 400 – 450 ml.

Grilled fish and seafood, poultry with cream sauce, or goat cheese, brie.
