Marmalade is a serious matter in London. It is discussed in families, defended, and sometimes debated over whether it should be fine or in long zest, sweet or bitter. Our English Marmalade takes a stand. We have awakened the morning jar by infusing it for a long time with Earl Grey tea, chosen for the purity of its Calabrian bergamot. Three citrus fruits converse here: orange for texture, lemon for zestiness, and pink grapefruit for roundness. All three are Andalusian. They grow in Pizarra, in the Guadalhorce valley, north of Málaga, at Antonio's farm. He is twenty-eight years old and has been working the land since childhood, on the farm that his parents founded in 1995. He waters with drip irrigation, draws his energy from solar panels, and holds a simple idea: that people know who grew the fruit. We do too.
