OZPEAN was born from the meeting of the Basque Country of the Coast and the interior, from EGIATEGIA in Ciboure and the Saint-Jacques Vinegar Factory in Mauléon, two men, two paths, who found each other to create the first wine vinegar made from underwater lees. Once the underwater wines are bottled, a small amount of wine remains at the bottom of each tank, from which the lees resulting from the second alcoholic fermentation are not used, but have a strong aromatic potential. By preserving these tank bottoms in old barrels, and with the spirit that has always driven us to maximize the value of our by-products, the idea of creating the first underwater wine vinegar was born. Then, there was a wonderful meeting in June 2023 with Jean-Philippe Lanougère, a master vinegar maker based in Mauléon, in the interior Basque Country. Today, we are very proud to offer two vinegars, one classic and the other Balsamic.
