Founded in 1911 by Jean Dischamp, our family-run and independent fromagerie is dedicated each day to producing and aging the “excellence of Auvergne cheeses.”

Founded in the heartland of the Auvergne AOP regions, family-owned and independent for over 115 years, Paul Dischamp Fromagerie brings together ancestral know-how and a constant pursuit of excellence in every cheesemaking gesture.

“Our recipe for indulgence is simple: quality milk, passionate men and women, strong commitments, and ancestral know-how passed down from generation to generation!”

The story truly began in 1904, when Jean Dischamp, the son of a farmer, opened a small shop in Clermont-Ferrand dedicated to Saint-Nectaire cheese. Its volcanic stone cellars provided ideal aging conditions. In 1921, his son Paul expanded the family business, later enlarging the aging cellars in the 1950s and establishing Paul Dischamp as a leader in Saint-Nectaire cheese. Passed down through generations, this expertise continues today with new sites in Cantal, Saint-Nectaire, and Saint-Flour, and with the fourth generation now guiding the family business toward the future of Auvergne’s AOP cheeses.
