A crumpled tablecloth, a wicker basket, a teapot, and pears and quinces placed there as if waiting for someone to decide their fate. Cézanne looked at them for so long that he made a masterpiece out of them. We looked at them in turn, and we decided. The pear first, chosen ripe, which melts and gives sweetness. The quince next, that hard, rough fruit that cannot be bitten into yet smells so strong that it scents an entire room. When cooked, it blushes, softens, gives its grain and that slightly wild length that makes all the difference. The two together, in a copper cauldron, in small quantities, with unrefined cane sugar. A raw, earthy jam that does not seek to please everyone and, curiously, manages to do so. The still life is at Orsay. The autumn orchard is in the jar. All that’s missing is the spoon. At the table in the morning on a buttered country bread. In the evening with sheep cheese, an aged cantal, a morbier. At the bottom of a walnut tart, or on a roasted pork chop at the end of cooking. Preservation: The white lacquered jar protects the jam from light and ensures perfect preservation. After opening, keep in the refrigerator for three to four weeks.
