Mountain cheese is made from unpasteurized milk during the summer when cows graze freely in the Matjaž hills. It matures for at least three months in the mountains, gaining the true aromas and flavors. During the cheese-making process, the cheesemaker adds tomato peel powder to the mixture, which gives the cheese a slight red hue and a taste of summer.
