Winemaker's Diary:
Matured grape clusters with a high sugar content of 27.5 °NM were hand-picked on 12.10.2022. After destemming and crushing, the grapes were sent to the press, where we obtained a beautiful must with ideal parameters for producing sweet wine. After static clarification of the must, we used noble wine yeast cultures to support fermentation. Fermentation took place in a stainless steel container at a temperature of 18 °C. After fermentation, the young wine was racked off the lees until bottling.
Wine Service:
at a temperature of 7 - 8 °C in wider bowls of slightly closed tulip glasses with a volume of 300 – 400 ml
