Lardo, or lard. This is the name of an Italian specialty, whose traditional production process dates back to very ancient history, when the current methods of long-term food preservation did not yet exist. Sea salt, garlic, rosemary, and pepper are all natural preservatives. The spices and high-quality back fat from heavy pigs mature for many weeks in cool cellars. The result of this maturation is a fragrant folk delicacy that is suitable for further cooking as well as thinly sliced for canapés, toasts, or bread.
Due to its pronounced salty taste, we rightly call it "Our Pršutérský Salty Treat".
