Artisan sugar-free candies

Artisan candies made with honey and rosemary without added sugar. Made in Spain.

Ingredients: Isomalt sweetener, 10% honey, flavoring and colorants E100/E131

Honey candy recipe

1 cup of white sugar
1 cup of water
1 cup of honey
Juice of 3 lemons
1 tablespoon of ground ginger (10 g)

We put all the ingredients in a saucepan over medium heat.
Mix with a whisk while everything heats up.
When foam appears on the surface, we reduce the temperature and continue stirring until it reaches 150 or 155 °C. If you have a kitchen thermometer, insert it to check the temperature.
If you don't have one, we can check if it's ready by dropping a few drops of the mixture into a glass of very cold water; if it solidifies as soon as it hits the water, it's ready.
Let the mixture cool and pour it into a candy mold previously greased with oil. Leave it in the refrigerator until it completely solidifies.
Once they have hardened, we unmold the candies and roll them in sugar so they don't stick together.
We store them in the refrigerator.
