Bethmale has stood the test of time; some even say that this cheese was served to Louis VI Le Gros, former king of France, during his visit to Saint-Girons. It has managed to unite culture, strength, and heritage of the Pyrenees, producing one of the most well-known cheeses and one of the few made from cow's milk in the Pyrenees. Bethmale is a cheese that will surprise you with its typical taste of yeast and hazelnut, and it pairs perfectly with a light red wine. To enjoy this bethmale in the best way, nothing is better than pairing it with a fruit jam with acidic notes, preferably a black cherry jam. This bethmale, like all the other cheeses we offer, comes from one of the best cheesemakers in France, a Toulousain who is also the best craftsman in France, the Xavier cheese dairy.
