The Angus beef short rib, also known as Short Ribs, is a unique cut in the world of meat. Less known than the rib or the sirloin, it remains spectacular when cooked slowly in a smoker, on the barbecue, or through gentle braising. This cut combines tenderness, generosity, and remarkable aromatic depth. Sourced from the Angus breed, renowned for its bright red meat, perfectly distributed fat, and generous marbling, this piece reveals its full potential during slow and controlled cooking. As it gently melts, the fat nourishes the meat, making it tender, stringy, and irresistibly flavorful. Packaged in a 700 g portion, sliced into 4 pieces, the Angus short rib is ideal for a friendly and generous cooking experience, whether on the barbecue, in the smoker, or in a casserole. This format allows for easy preparation while preserving all the aromatic richness of this exceptional cut. Perfect for fans of American barbecue or for those looking to venture off the beaten path, the short rib is a piece to share around a table or a warm smoker. Butcher's tip: simply season, smoke at a low temperature between 100 and 120 °C for several hours, until reaching an internal temperature of about 90 °C. The result: melt-in-your-mouth, flavorful meat that shreds with a fork.
