Fresh Galician gooseneck barnacles | Handpicked on the coasts of the Rías Baixas
The Galician gooseneck barnacle is one of the most valued seafood items in Spanish cuisine. The barnacle harvesters collect them by hand at low tide, facing the risks involved in working on the rocks battered by the waves of the Galician coast. This effort and danger justify their price and give each barnacle an intense, clean, and unmistakable sea flavor that cannot be found in any other seafood.
We always send them raw so they arrive in the best condition and you can cook them at home right before eating.
How to cook Galician gooseneck barnacles
Boil plenty of water with sea salt (50 g/liter). When it reaches a strong boil, add the barnacles and remove them 1 to 2 minutes after the water returns to a boil. Cover them with a damp cloth in their own cooking water until serving to keep them warm and juicy when eating.
Storage
Keep refrigerated covered with a damp cloth. Consume within 48 hours of receiving the order.
