Winemaker's Diary:
The harvest of Merlot was carried out by hand-picking the ripest healthy whole bunches. We macerated the must in a vinificator with immersion and showering of the pomace cap. This achieved a significant extraction of aromatic and flavor compounds from the grapes into the wine. After malolactic fermentation, it aged for 16 months in premium 300-liter oak barrels from the SEGUIN MOREAU brand, until it was time for bottling. It was further perfected by an additional two years of aging in the bottle.
Wine Service:
At a temperature of 15 - 17 °C after decanting from a carafe in 'Bordeaux' shaped glasses with a volume of 550 – 650 ml.
Food Pairing Recommendation:
Rib-eye steak with mustard aioli and lightly sautéed vegetables; Aged pork 'pršut' with dark olive tapenade.
