This black pig cassoulet from Bigorre is much more than just a stew. It is an immersion into the Southwest, an artisanal recipe that pays tribute to one of the most emblematic gastronomic treasures of France. Here, the choice of black pig from Bigorre, an ancient breed raised freely, makes all the difference. Its marbled, juicy, and flavorful meat brings a unique aromatic depth. Combined with melting beans, slowly cooked with seasonal vegetables and a homemade broth, it creates a dish that is both generous, balanced, and comforting. This exceptional cassoulet is best enjoyed slowly reheated, in the oven or in a casserole, until a light golden crust forms on the surface. It can be served as is or accompanied by a green salad for a complete meal. Butcher's tip: open, pour into a clay dish, and let it brown in the oven at 180 °C for 25 to 30 minutes. For even more generosity, add a drizzle of duck fat or a few slices of grilled sausage just before serving.
