Please note, Fourme d'Ambert AOP is drastically different from the monument of French gastronomy that is Roquefort, being fundamentally creamier and milder than the latter. Both are blue-veined cheeses, but one is part of the blues, representing cow's milk cheeses, while the other is made from sheep's milk and stands alone as a family among these blue-veined cheeses.
