The alheira is a smoked sausage. According to tradition, this sausage was created by the New Christians who secretly continued to keep the customs of their renounced Jewish religion in order to give the impression to society that they were accepted and well-integrated Christians. Since Judaism prohibited the consumption of pork, some of the supposedly newly converted would have invented a sausage where poultry meat discreetly replaced the pork, which was traditional among Christians. Dom Casel recreates the story by adapting the ancient recipe to contemporary times. A recipe adjusted between the palates of those who have the gift of making sausages and the culinary wisdom of Chef Flávio Silva. Ingredients: Pork from Dom Porco da Sertã (Origin Portugal), chicken meat (Origin Portugal), bread [wheat flour type 55 (GLUTEN), salt and technological improver [wheat flour (GLUTEN), emulsifier (E472e), acidity regulator (E170), flour treatment agent (L-ascorbic acid) and enzymes (E300)], beef (origin Portugal), ham [pork leg (96%), sea salt, sugar, dextrose, antioxidants (E316 and E331) and preservatives (E252 and E250)], olive oil, salt, paprika, piripiri. Sausage in natural pork casing. May contain traces of sulfites, lactose, and egg. May contain bones. Preparation Method: Shallowly pierce the alheira in several places. Fry, grill, or bake in the oven.
