According to our weekly selection, you may find Limousin, Blonde d'Aquitaine, Charolais, or any other breed recognized for its butchery quality. Butcher's advice: remove the tournedos from the refrigerator 30 minutes before cooking. Sear it for 2 to 3 minutes on each side in a pan or on a griddle, then let it rest for 2 minutes under aluminum foil before serving. This will give you tender and flavorful meat, perfect served with a dauphinoise gratin or truffle mashed potatoes.
