The Raxo is prepared immediately, ideally in a skillet or griddle.
- Quick Cooking: Heat a large skillet (preferably thick-bottomed) with a drizzle of olive oil (just a little, as the marinade already contains oil).
- Sealing: Add the marinated raxo and cook over medium-high heat. The goal is to quickly seal the meat so that it is golden and crispy on the outside while remaining juicy on the inside.
- Time: Cook for about 5 minutes, stirring occasionally, until the cubes are completely golden. You can add a splash of Galician white wine in the last minutes if desired.
- Classic Accompaniment: The raxo is traditionally served on a bed of fried potatoes cut into cubes or "cachelos" and some fried Padrón peppers. Pour the cooking juices from the meat over the potatoes to create a delicious "sauce."
