The pork paupiettes are made from pork sourced directly from the Roussaly slaughterhouse in Lacaune in the Tarn and its breeders from the A.P.O (Association Porci d'Oc). Our recipe for pork paupiette with raclette onion is a simple and comforting preparation. It consists of local meat filled with a homemade stuffing: a mixture of sausage meat and onion, seasoned with salt, pepper, and a mix of spices. Butcher's tip: Cook your pork paupiettes at 180 °C for about 45 minutes in a lightly oiled dish. You can also prepare them in a pan or casserole, on low heat and covered, for 35 to 40 minutes.
