The Mothais on Leaf is an artisanal cheese made from raw goat's milk, originating from Poitou and now recognized as AOP. It is distinguished by its aging on a chestnut leaf, which absorbs moisture and gives the cheese a melting texture and unique woody aromas. Its fine and creamy lactic paste develops sweet flavors of fresh milk, hazelnut, and underbrush, with a natural wrinkled rind sometimes marked by noble molds. This cheese is produced in the departments of Deux-Sèvres, Vienne, Charente, and Charente-Maritime. It can be enjoyed young for its freshness or more aged for its aromatic complexity. Mothais on Leaf is ideal as an appetizer, on country bread, or paired with a dry white wine from the Loire Valley. It embodies the finesse and goat cheese tradition of Poitou.
