What is Bacon Jam?
How best to describe Bacon Jam? Simply put, it is a bacon jam. The foundation of this delicacy is honest Moravian bacon, which we have smoked by Mr. butcher Josef Jůza from Březina near Tišnov (1). He prepares it for us using the traditional method – marinated only in kitchen salt, (2) without any additional ingredients.
After smoking, we cut the bacon into small cubes and render it (3) in a pot until the pieces are crispy and golden. Then we add onion (4), garlic, vinegar, sugar, coffee, paste from walnuts (5), and other ingredients. We cook everything until the flavors blend wonderfully (6) and the mixture achieves the ideal consistency (7). Finally, we fill it into jars and seal it. History of Bacon Jam
We must admit that Bacon Jam is not our original invention. Worldwide, this delicacy is known as "bacon jam", and its creator is chef Chris O'Connor, who allegedly combined onion chutney with smoked bacon and other ingredients in a restaurant in East London. This mix quickly became popular, and since then, "bacon jam" has spread around the world. Every recipe varies slightly – ours focuses primarily on high-quality Moravian bacon and walnut paste, which give it a unique spicy touch.
