Medlar - an old fruit variety widely cultivated in the Middle Ages
The beginnings of its cultivation probably date back around 3000 years. Currently, this species occurs very rarely in our region, making it quite a rarity. The fruits are harvested only after they have softened, when they have gone through frost, at which point they also lose their astringent taste. A fruity, spicy, and slightly tangy sauce particularly suitable for grilling and meats. The main ingredient is medlar, and it also contains apples, tomatoes, garlic, vinegar, sugar, and spices. The sauce is blended to a relatively smooth consistency but may contain small pieces of individual ingredients.
