Creamy TERRA Cheese
The TERRA cheese is a cheese with soft texture and edible rind. It can be firmer or creamier depending on the time of year. It is not pressed. Continuous manual turning and a lot of work both in the drying chamber (2 turns daily) and in maturation (turning every 2 days). Natural molds due to the aging cave where penicilium roqueforti predominates over penicilium candidum.
- Milk: RAW milk from Jersey breed cows.
- Maturation: Soft cheese with a maturation of 30 days.
