Danube SUNSET 2018
Winemaker's Diary:
We hand-picked healthy and ripe grapes from the Danube variety into small crates on October 30, 2018, with a sugar content of 27.5 °NM. The maceration on the skins took place in 3 different vinifiers. After pressing and completing malolactic fermentation, we transferred the wine to age in two 1000 l barrels and 300 l barrique barrels, where it rested until September 2019. The wine then waited, unified in a stainless steel container, for the bottling date. We filled it into bottles without prior filtration, preserving a relatively high extract of intense color, rich aroma, and robust flavor with a small amount of sediment. This contains some precipitated red pigment as well as tartaric acid salts, which are a natural component of wine with high aging potential.
Wine Service:
At a temperature of 14 – 16 °C in "Bordeaux" type red wine glasses with a volume of 550 – 650 ml.
Food Pairing Recommendation:
Beef steak with mashed potatoes, seasonal vegetables, crispy onions, and truffle sauce; slowly braised beef ribs with roasted kale and smoked BBQ sauce.
