The Epicurean is an artisanal goat log produced at the Ferme de Chasse Nuage, nestled in the hills of Pilat in Longes. This raw milk cheese from Saanen goats is ladled into molds and then aged to develop a slightly wrinkled natural rind. Its lactic paste offers a soft and melting texture, with a firmer heart depending on the aging. On the palate, it reveals subtle aromas of fresh milk, local herbs, and hazelnut. It can be enjoyed both fresh and aged, paired with a dry white wine or a grain bread.
