Its semi-cooked paste is compact and sprinkled with black peppercorns, added directly into the curd for perfect integration. Its yellow-brown striped rind conceals a firm texture and a taste balanced between the sweetness of sheep's milk and the spiciness of pepper. This cheese is aged for a minimum of 30 days but gains intensity over time. It pairs ideally with full-bodied red wines, arbutus honey, or whole grain bread.
