The Iberian pork roast, like all our other roasts, is barded and tied directly by our butchers. It is filled with slices of Emmental cheese and chorizo. This preparation gives it an amazing taste and a subtly spicy texture. This roast is made from pork loin, sourced from pigs in the Southwest. We work with local breeders from A.P.O (Alliance Porci d'Oc), a partner of the Roussaly cutting workshop in Lacaune in the Tarn. Choose a tender and flavorful roast enhanced by mild chorizo to change from the usual Sunday roasts. Butcher's tip: It will be perfect when baked for 45 minutes (duration per kilo of meat) at 180°C accompanied by garlic cloves and seasonal vegetables. A comforting dish for winter evenings.
