Preparation of Homemade Tomato Sauce

1. To prepare this recipe, you can either peel the tomatoes or prepare it directly with the tomatoes with skin. If you leave the skin on, wash the tomatoes well.
2. Cut them into quarters in a container that allows you to keep the juice of the tomato itself as we will use it too.
3. In a saucepan, add the virgin olive oil and the tomato and its juice. Stir well and cook over high heat until it starts to boil.
4. Once it starts to boil, lower the heat. Add the salt, sugar, and bay leaf.
5. Let it cook for about 10 minutes and stir. To prevent splattering, remove from heat, wait a few seconds, remove the lid allowing it to drain inside the pot, and stir.
6. Let it simmer for about two hours. During this time, stir occasionally to prevent sticking.
7. Once it is to your liking, turn off the heat and pass the sauce through a food mill. This way, you will remove the skin and seeds from the tomato.
