Unfiltered and unpasteurized. Untamed! Ingredients: Hubelj water, barley malt (gluten), a huge amount of hops, Phantasm (ground dried skins of Sauvignon grapes), hop extract, and yeast. The triple IPA, first brewed in 2017, is a heavyweight for true craft enjoyment. The name "Veliki" comes from the exceptionally high alcohol content and the enormous amount of hops combined in three forms. It consists of bitter extract, ground hop cones, and cryo powder, and this year it will contain Phantasm for the second consecutive year – an extract from Sauvignon grape skins. This annual autumn seasonal hop treat is brewed only once a year and is suitable for a premium craft offering for the most demanding gastronomes.
Phantasm is an innovative ingredient derived from the skins (pomace) of Sauvignon Blanc grapes and is taking the brewing world by storm. Not only does it give the beer intense fruity aromas, which is the holy grail of every modern craft brewery, but the production of Phantasm uses skins that would otherwise be discarded by winemakers. With its high thiol content, it brings exotic notes of tropical fruits such as mango, pineapple, and citrus, making each sip even more experiential. The ingredient comes from New Zealand – from the famous wine region of Marlborough, known for its richly aromatic wines and hops. And these famous New Zealand notes will further emphasize the character we are accustomed to in New England IPAs. VELIKI IPA, already renowned for its intense flavor, will now be an even more explosive beer – perfect for lovers of tropical, hazy IPA styles.
About triple IPA: Although giants are reluctant to fit into categories, we have placed this among the "triple IPA" style. The rich candy-like body supports the enormous amount of hops, which becomes even more aromatic when combined with various yeasts. This premium beer is balanced, as the sweetness perfectly integrates with the abundance of hops. The bitterness is mild yet persistent, and each sip takes you on a journey through a distinct flavor that develops into a long-lasting aftertaste. What does it mean if beers are top or bottom fermented? Top fermentation is most often associated with ales. It is a method of alcoholic fermentation that occurs in beer when active yeasts rise to the surface and form a crown (a kind of yeast foam). It predominantly involves the yeast Saccharomyces Cerevisiae, colloquially known as ale yeast. Such yeasts prefer higher fermentation temperatures, approximately from 15 to 25 degrees. In contrast, bottom fermentation yeasts are associated with lagers. This fermentation occurs at the bottom of the vessel. It predominantly involves the yeast Saccharomyces Pastorianus, or colloquially, lager yeast. Such yeasts prefer lower fermentation temperatures, approximately from 5 to 10 degrees.
