Premium Sliced Jerky
Salting is one of the oldest methods for preserving food and has always aimed to store them and keep them edible for a long time. We wanted to create a cured meat product using the hindquarters of beef of the highest possible quality to ensure a great product at the end of the process.
The curing method is purely artisanal as it is done with the utmost care when salting and drying the pieces in a cellar for a period of 16-18 months under controlled conditions of low temperature and low humidity.
The raw material used in the production of our jerky comes from the cuts of hind legs, flank, silverside, and top round of beef that is at least 5 years old and has a minimum carcass weight of 400kg, sourced from high milk production breeds, with a rigorous selection process aimed at achieving the best qualities.
