The Truffle Tomette is a Swiss artisanal specialty produced in Rougemont in the Fribourg Pre-Alps. Made from raw cow's milk, this soft cheese with a bloomy rind is aged with summer truffles, which give it an elegant and original aromatic touch. Its creamy and melting paste reveals a balance with the deep aromas of the truffle. It is ideal on a cheese platter or at the end of a meal, accompanied by an aromatic white wine such as a Viognier or a lightly oaked Chardonnay, which will enhance the richness of its flavors.
