We include semi-cured sheep cheese, our softest sheep cheese. With an aging of 2 months, it offers a more intense flavor and a softer texture. Then we invite you to try the cured cheese, with an aging of 4-6 months. And not just any cured sheep cheese, but the best cured sheep cheese in Spain and the Third Best Cheese in the World: the Emborrado Sheep Cheese.
The old cheese has an aging of over 7 months, and the passage of time gives it a harder texture.
