Recipe to extract the pulp from the choricero pepper
- Take a choricero pepper and touch it to locate the seeds. Then, with a sharp knife, cut from below the seeds to the tip of the pepper.
- Then, with your hands, remove the seeds and the stem from the choricero pepper. Repeat with the other peppers.
- Now rinse them well under running water to remove any dust that the peppers may have and any seeds that may still be attached.
- Place the peppers in a bowl and cover them with water. Soak for 3 or 4 hours, and after that time, take them out and let them drain well in a colander.
- Now extract the meat from the pepper with the help of a knife, dragging the blade to separate the meat from the skin.
- Once you have extracted all the meat, set it aside and discard the skin.
- Do the same with the other peppers. And that's it, you now have the choricero pepper meat ready to use in any recipe.
