Recipe to extract the pulp from the choricero pepper

  1. Take a choricero pepper and touch it to locate the seeds. Then, with a sharp knife, cut from below the seeds to the tip of the pepper.
  2. Then, with your hands, remove the seeds and the stem from the choricero pepper. Repeat with the other peppers.
  3. Now rinse them well under running water to remove any dust that the peppers may have and any seeds that may still be attached.
  4. Place the peppers in a bowl and cover them with water. Soak for 3 or 4 hours, and after that time, take them out and let them drain well in a colander.
  5. Now extract the meat from the pepper with the help of a knife, dragging the blade to separate the meat from the skin.
  6. Once you have extracted all the meat, set it aside and discard the skin.
  7. Do the same with the other peppers. And that's it, you now have the choricero pepper meat ready to use in any recipe.
