Seasoned soft goat cheese with a washed rind. A tribute to the most characteristic cheese of the Bergamasca region, Taleggio DOP, this goat variant makes delicacy and softness its strong points. Notes of milk, underbrush, and the unmistakable 'aroma of stracchino' from the denser paste accompany it during the initial aging phase, before shifting to increasingly intense aromas, just as the paste tends to become 'stracchino' more and more, from the creamier exterior to the more chalky interior, as the recipe for 'raw paste' dictates.
