Ripened soft goat cheese with a washed rind. Inspired by the tradition of Munster, which it shares creaminess and intense aroma with, it has, however, a unique ingredient: raw beer! Added to the milk before curdling, it imparts a unique, slightly bitter taste during the aging process. Furthermore, after about a month, the yeasts from the beer begin to react abundantly with the cheese paste, causing it to cream quickly. The name Heretic was born from an exclamation among cheese-making colleagues, as the 'sacred texts' of cheesemaking categorically exclude the possibility of combining beer yeast and raw milk, to avoid actual rising of the cheeses!
