People have been making honey beverages for 9000 years — but brewers have not yet said the last word! With the marriage of honey and hops, certain yeast strains can perform biotransformation of less aromatic compounds into more aromatic ones. With the right combination of raw materials, we can further increase the amount of these compounds. Therefore, the latest trend in the world of strong IPAs is replacing sugar with honey and opening new horizons. Years ago, you already drank strong honey beer from our kettles, where we used linden and chestnut honey from the Vipava Valley in combination with various hops. We named the beer Biotransformation IPA. This time, however, we brewed a diametrically opposite, light and gentle honey beer that caresses you just like when someone says to you, 'oh, honey.' We brewed Oh, Honey! for Japan, where we will present ourselves at a fair in Tokyo in March 2026. We wanted to showcase the subtle gentle notes of Slovenian hops and local honey, which is highly valued in Japan. “The Minister of Health warns: Consuming alcohol can be harmful to health!”
