What are piparras?
It goes by many names; Basque guindillas, Piperras, Piparras, Piperrak, garden prawns… But what can we say about the fresh guindillas “piparras”? First, let’s say they hardly have any heat. What you hear! They don’t have heat, although there’s always one that breaks the rule ;)
The piparra has a meaty texture, a fresh flavor, and an elegant aroma. This characteristic aroma makes it pair well with fresh aromatic herbs like parsley, lament, basil, and chives.
Piparras are cultivated between April and May, and their harvesting is done by hand at their optimal moment, between June and September.
