The Bigorre black pork daube is the warmest expression of the Southwest terroir. This traditional recipe highlights a rare and precious meat, that of the Bigorre black pork, raised freely in the foothills of the Pyrenees, naturally fed, and known for its melting texture and fragrant fat. Cut into selected pieces, the meat is slowly simmered in a wine sauce, accompanied by herbs, sweet onions, melting carrots, and a few discreet spices. The result: a confit meat, full of character, where each bite reveals the richness of the black pork and the depth of the cooking juices. Perfect for large gatherings or Sunday meals, this comforting dish is simply enjoyed reheated, accompanied by steamed potatoes, fresh pasta, or a crushed vegetable medley. Butcher's tip: heat slowly over low heat for 15 to 20 minutes. For added indulgence, drizzle with olive oil or add some fresh herbs before serving. Best enjoyed with a red wine from the Southwest.
