It comes from blonde cows in Galicia, raised according to traditional methods in the northwest of Spain. These cattle live in extensive pastures and are slaughtered late, between 8 and 15 years, allowing the meat to develop a rare depth of flavor. Additionally, it undergoes a dry aging process on the bone for about 28 days, which enhances tenderness and concentrates flavors. This ribeye is ideal for controlled cooking, whether in a pan or on the barbecue, preferably using indirect heat to preserve the integrity of the intramuscular fat. A simple quality salt will suffice to reveal its full richness. Butcher's tip: take it out of the refrigerator 45 minutes before cooking. Sear it over high heat for 1 minute on each side, then let it cook gently until the desired rosy center is achieved. Rest for 5 minutes before serving for perfectly distributed juices.
