What is Bacon Jam?
How best to characterize Bacon Jam? Simply put, it is bacon jam. The base of this delicacy is quality Moravian bacon, which is smoked by Mr. butcher Josef Jůza from Březina near Tišnov (1). He prepares it for us using the traditional method – marinated only in kitchen salt, (2) without any additional ingredients.
After smoking, we cut the bacon into small cubes and in a cauldron, we render it (3) until the pieces are beautifully crispy and golden. Then we add onion (4), garlic, vinegar, sugar, coffee, paste from walnuts (5), and other ingredients. History of Bacon Jam
We must admit that Bacon Jam is not our original invention. In the world, it is known by the name "bacon jam", which was allegedly created by chef Chris O'Connor. In a restaurant in East London, he combined onion chutney with smoked bacon and other ingredients. This mix became a hit, and since then, "bacon jam" has spread around the world. Every recipe is a bit different – ours is based on quality Moravian bacon and paste from wild walnuts, which give it a characteristic spicy touch.
