Harvested from cattle breeds known for the fineness of their grain and the richness of their flavors, this cut is perfect for slow cooking, where it releases its full aromatic depth. Traditionally used for pot-au-feu, stew, or beef bourguignon, it brings an intensity and generosity unmatched to your seasonal dishes. At Maison Lascours, each piece is carefully prepared by our butchers to ensure even cooking and impeccable quality. French beef from the finest French meat breeds. Depending on our weekly selection, you may find Limousine, Blonde d'Aquitaine, Charolaise, or any other breed recognized for its butcher quality. Butcher's tip: Sear your oxtail pieces in a bit of duck fat to color them well, then let them simmer for several hours in a broth flavored with red wine, carrots, and onions. The meat will become tender, and the sauce, coating and flavorful — a true bistro dish at home.
