How to open and serve Galician oysters: With an oyster knife, insert the blade into the pointed end and twist to pry it open. Discard the initial water, separate the meat, and serve on crushed ice with a squeeze of lemon.
Storage: Keep refrigerated with the concave side down, covered with a damp cloth. Consume within 3-5 days after receipt.
