Chmelíček is a handmade delicacy made from young hop shoots. We pick them in the spring as soon as they sprout from the ground, and we marinate them in an excellent sweet and sour, mildly spiced brine. This old, forgotten recipe was popular with our ancestors as early as the 15th century. Chmelíček will surprise you with its delicious taste with a subtle bitter hint of hops. What it pairs well with
With any meat – roasted or grilled. An ideal companion is with Moravian smoked meat, sausages, or even on pâté. Chmelíček is also excellent in salads or on an egg omelet.
How we make it
We obtain the hop shoots from Moravia. From the beginning, we have been collaborating with the agricultural cooperative Kokory near Přerov. Although the preparation of Chmelíček is not easy, in the end, it is a delicacy that is worth the effort. Collecting a kilo of hop shoots is an infinitely long task. Then we must thoroughly rinse the hops to remove all the dirt they collected on their way from the soil. After that, we fill the shoots into jars, pour in the flavored brine, and seal them. The processed Chmelíček must be left to mature for some time so that the flavor of the brine penetrates the shoots.
