Shropshire Blue is an English blue cheese, recognizable by its orange color due to the addition of natural annatto. Although it is named after the county of Shropshire, it is historically produced in Nottinghamshire, notably by Colston Bassett Dairy. Neal’s Yard Dairy matures the best batches of Shropshire Blue to ensure a buttery texture and balanced aromas. This cheese combines the strength of a blue with the sweetness of a rich, buttery paste. It offers notes of hazelnut, caramel, and mushroom. Its natural, thin rind protects a blue-veined paste that melts in the mouth. Shropshire Blue is perfect at the end of a meal, paired with port or a sweet wine.
